Einkorn is one of the oldest cultivated wheats on earth, lower in gluten, higher in protein, and richer in flavor than modern varieties. Sprouting the grain before milling unlocks nutrients and reduces phytic acid, while stone grinding preserves the whole grain so nothing is lost between field and oven.

What you get: a golden, crackling crust, a tender open crumb, and a rich, nutty sweetness that sets einkorn apart from every other loaf. Perfect alongside soups, with good butter, or simply on its own.
