Sprouting the grain before milling unlocks nutrients, reduces phytic acid, and creates a naturally sweeter, more complex flavor. Stone grinding preserves the whole grain - bran, germ, and all - so nothing is lost between field and oven.
What you get: a crackling crust, an open, chewy crumb, and a mild tang that makes every slice worth savoring. Perfect alongside soups, with good butter, or simply on its own.
